Our Family Favorite Chicken Noodle Soup
Winter is not the only time for soup. Sure, it fits perfectly with the cold weather, but you can have soup at other times as well. You might have the sniffles, tucked up on the couch with a doona and have your loving partner bring you chicken soup and all of a sudden everything seems right in the world. Or you simply need a quick and easy meal for dinner.
I’m not usually a big fan of soup. This soup is a quick and easy soup that’s filling enough as a main course and the kids never complain when this meal hits the table. In fact, they usually ask for more!
- 1 Tablespoon olive oil
- 1 brown onion, finely chopped
- 2 carrots, diced
- 2 sticks celery, thinly sliced
- 2 garlic cloves, crushed
- 4 cups chicken stock
- 3 cups water
- 400g roast chicken, chopped
- 440g Singapore noodles
- 2 Tablespoon parsley, to garnish

1 – Heat oil in a large saucepan over medium heat. Add onion, carrot, celery and garlic and cook for 8 minutes or until tender.

2 – Add stock and 3 cups of water. Stir until well combined and mixture comes to the boil.

3 – Add chicken and noodles. Cook for 2 minutes or until heated through.

4 – Ladle into bowls, top with parsley and serve.

My kids love having this soup with “soldiers” – buttered toast cut in to strips. I enjoy my side dish of soldiers with olive dip instead of butter.
My friend, who gave me this recipe, swears by singapore noodles in this soup. But I’ve made this soup with different types and textures of noodles such as udon or hokkien noodles. Which my family enjoyed as well.

Yummo, this sounds like a similar one that my mum use to make. I suggest trying it with Vermicilli noodles for a healthier meal option.
This was fantastic. Everybody at home loved this. Easy and quick and will certainly do it again.
What’s wrong with fresh whole chicken chopped into pieces suitable enough for soup? And two minute noodles as a final ingredient (after the vegetables & spices) for the meal.
I make one pretty much the same but with a handful of rice
I love it..I use the clear noodle/vermicelli instead…
