I’m the world’s laziest cook at the moment, going through what I like to call a ‘Jerry Seinfeld’ stage (cereal for breakfast, lunch and tea). My other half has been in England for the last few months, so my usual duty of household caterer has been replaced by household slob.
We’re celebrating fresh ingredients at Coles Online this spring, so I thought it was the perfect opportunity to prepare a dish where the vegetable is the hero.
