I tasted these Almond Fingers at a morning tea a friend held a couple of years ago. She generously wrote out the recipe and I made them a few times and received rave reviews. But in recent years I’d somehow lost the recipe. As I was searching out gift ideas I came upon the recipe again. This time I will be cooking them as a thank you gift for my children’s teachers.

Peppermint and chocolate go so well together. Some of my favourites are Peppermint Crisps, Aero Peppermint block chocolate and Peppermint Magnum ice creams. And of course these Peppermint Star biscuits. They are a perfect gift of appreciation for anyone, especially the teacher in your child’s life. We made these Peppermint Stars for my daughter’s Prep teacher. Stars for a star of a teacher this year.

Waffles are great as a dessert or for brekkie. To make them you will need a waffle maker. Lucky I bought one as a gift for my husband’s last birthday. It is one of the best gifts I ever given my husband. Well apart from the range of tools that he has put to good use building and fixing thing around the house. It is the present that keeps on giving. Just recently for Mother’s day I was served up some delicious waffles for brekkie. The great part is that the waffle maker is a Scandinavian waffle maker which makes heart-shaped waffles.

It’s hard to beat the classics so keep it traditional with decadent chocolate mousse and brownies. Teamed together they are decadent dessert.
Layer crumbled brownie in a glass or parfait. Next, put your mousse into an icing bag (or a ziploc and clip one corner off for a makeshift pastry bag) and use to fill each parfait glass 3/4 of the way full. Top with fresh whipped cream and garnish with shaved chocolate.
