Mini burgers are great to feed a hungry hoard of kids at birthday parties, but equally great for an easy night’s dinner.
Like tacos and san choy bau my kids like constructing their own burgers. I find that if they have a part in making the meal they are more likely to happily eat it. They also get to choose what type of hamburger they’d like tonight. A Hawaiian special or a Cheeseburger deluxe.

You may have noticed, there has been a very Italian theme to the Coles stores and our online site these past few weeks. Naturally, I saw this as a challenge to go a little against the grain. Lasagna is one of my favourite meals – not only to eat, but also to cook. It was also one of the first meals I learnt to cook as a kid. I love layering the meat sauce, bechamel cheese sauce and pasta. Topping it all off with cheeses. Lasagna is delicious on the night of cooking it, but even better for dinner a couple of nights later. The leftovers make for easy dinners through out the week. It also freezes well. Cut the lasagna in to individual serves and pop it in the freezer. Then you only need to reheat enough for the number of people you are feeding.

It has been over a year since our first foray into the unusual sandwich realm (and the sequel soon followed). I’m not entirely sure I would make it through another taste test like that.
The weird and wonderful combinations can be influenced by half-remembered references from family, friends, chefs or television characters. Some of these sandwiches gain traction, and can then be ordered around the world by name only. I think that means the sandwich has hit the big time! Read more…
Now summer has passed, it means my contribution to family meals moves from the BBQ outside to the oven inside, and each Sunday for the next 5 months, I’ll be cooking a roast dinner. As a child, this was a regular Sunday affair and I remain keen to keep the tradition going with my children. Lamb, pork and chicken will all get a regular run during the next few months, but it is roast beef that is the most popular, not least because it means Yorkshire puddings are part of the meal.
