I love using the weekend to get a headstart on the coming week’s dinners. Any pies, but especially my chicken and leek pies, are perfect for this, and I’ll usually prepare these whilst I’m cooking the Sunday dinner. Pesto is a delicious addition to so many dishes and can enhance the most simple ingredient. Two of my favourite ways to enjoy pesto are spread lighly on a freshly baked piece of bread and adding a dollop of pesto to great pasta or gnocchi.
I made my first batch of pesto about a year ago and hadn’t until that point realised just how easy it is to make fresh pesto.
