Open broccolini, parmesan and chilli ravioli

I’m the world’s laziest cook at the moment, going through what I like to call a ‘Jerry Seinfeld’ stage (cereal for breakfast, lunch and tea). My other half has been in England for the last few months, so my usual duty of household caterer has been replaced by household slob.

We’re celebrating fresh ingredients at Coles Online this spring, so I thought it was the perfect opportunity to prepare a dish where the vegetable is the hero. This simple recipe features Super Broccolini, the mightiest of all greens. It also happens to be as easy to prepare as a bowl of Cornflakes – tick! Read more…

Knockout Gnocchi

No one who knows me would ever describe me as a great cook, more a ‘means to an end’ cook. However recently I went on a fantastic Italian cookery course and am now hooked.

I have been conjuring up tiramisu, risotto, tortellini and my favourite…. gnocchi. We made enough for several meals last weekend and it was delicious so below are my steps to a great meal which is fun to make and incredibly tasty.

Non-tradtional Lasagna

SDttC13046You may have noticed, there has been a very Italian theme to the Coles stores and our online site these past few weeks. Naturally, I saw this as a challenge to go a little against the grain. Fettuccine Marinara

Fettuccine MarinaraA marinara dish comes together easily when you have a fresh seafood mix and a good bottle of white wine on hand.
You really want the seafood mix to be a combination of the freshest prawns, shrimp, calamari and fish fillets, whose flavours you’ll accentuate a decent white wine – we used a Victorian Pinot Grigio.

5 ways with pesto

pestoPesto is  a delicious addition to so many dishes and can enhance the most simple ingredient.   Two of my favourite ways to enjoy pesto are spread lighly on a freshly baked piece of bread and adding a dollop of pesto to great pasta or gnocchi.

I made my first batch of pesto about a year ago and hadn’t until that point realised just how easy it is to make fresh pesto.
