My number one weapon in the fight against fruit wastage is the freezer, in the afternoons I unpack the lunchbox and any uneaten fruit is popped into the freezer for future use – I usually cut the fruit when packing lunches, but if for some reason it is a whole piece, then I will cut it into smaller pieces and remove any seed/core before freezing. Greek salad, coleslaw, potato salad, caesar salad, nicoise salad, garden salad - are all old favourites that I make again and again and again. Each summer I try to add a few more salads to my limited salad reportorie. This summer my sister cooked up this wonderfully simple noodle salad that the family & I enjoyed with a feast of prawns, mussels and fish. It was deliciously crunchy!
