I’ll admit – I’m not big on breakfast. I know it’s the most important meal of the day, and I do love a good bowl of cereal but if given the choice between breakfast or an extra 10 minutes of sleep before work, I’m more likely to choose the latter.

My conscience won’t be clear until I get this off my chest… this recipe is a complete cheat.
In fact, from here on in I will no longer use the word ‘recipe’.
You see, for me the best type of cooking uses loads of flavour and fresh produce but bypasses copious amounts of time and effort.
Adding the word ‘gourmet’ to a dish seems to implicitly add time and effort to the equation so I think it’s about time we created a cheat.

I remember some time ago going to lunch with a large group, and one of our group was raving about the vegetarian options at this particular restaurant. I looked at the list, and one item in particular stood out as I had never heard of it before.
