The other day I discovered that my cousin is in love with custard. He would rather eat custard than anything else in the world. Recently I asked him to help me with a few things and he was very kind to assist so I thought I best repay him with equal kindness. I decided to try my hand at making a vanilla custard slice. My kids love anything with mince in it; burgers, rissoles, tacos, spaghetti bolognese, lasagna, meat balls, meatloaf, san choy bau – the list goes on.  The other day I was talking with a friend about my kids love of mince and she was raving about a new dish: tortilla pie.

We’ve got through the salads, felt patriotic and fired up the BBQ, the cricket is already 10 overs in and somehow we want to make room for some more food on this Australia Day.
